They have to wait until the virus is spotted by their products before sending it to be examined.

To be effective, anti-virus software needs to be able to detect and eliminate these infections quickly. This means that heuristic or behaviour analysis tools are more effective than simple signature detection.
Another issue is that incompatibility between various antivirus programs is quite common. While the majority antivirus software makers place much importance on the creation of high-quality products and pay great attention to removing bugs, the reality is that there are times when multiple antivirus programs can cause conflicts.
